Easy & Healthy Roasted Okra

It is so popular to find fried okra... Don't get me wrong, I love fried okra but I wanted to try something new. I picked up fresh okra from our local produce market and decided to roast the okra in the oven. 

It is so important that you give your okra a good rinse! Okra is pretty tough on the outside so dirt can really build up on them. Rinse them well and make sure they is no remaining dirt on them. 

Next, chop your okra about 1/3 inch thick or if you like thicker pieces just cut to your liking!

Make sure to always keep your cutting area clean and organized! 

Next place your sliced okra in a plastic bag and add your olive oil. I used olive oil from  Oil and Vinegar! They have the best selection and this shoppe is right near my home. 

You want to add your greek seasoning to the bag as well! You could use salt and pepper instead if you prefer! 

Shake the bag very well and place your okra on a baking sheet! It is literally that simple. See the recipe below to get the full details! 

Ingredients

  • 18 fresh okra pods, sliced 1/3 inch thick
  • 1 tablespoon olive oil
  • 2 teaspoons of greek seasoning

Directions

  1. Preheat an oven to 425 degrees F (220 degrees C).
  2. Arrange the okra slices in one layer on a foil lined cookie sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 10 to 15 minutes.
